Vegetarian Breakfast Wraps

  1. Warm you wrap up in a microwave or pan and then place on a flat surface.
  2. Spread some cream cheese on the wrap, then top with a generous amount of salad leaves, then set this to one side.
  3. Then let’s make the scrambled eggs. This is how I like to do mine. Whisk the eggs up with some salt and pepper. Then place a heavy bottomed pan on a medium heat with some extra virgin olive oil in and pour in the whisked eggs. Let the eggs sit in the pan until the bottom layer has started to harden then gently fold them, to form large curds, leave them so they are slightly undercooked, then remove from heat continuing to fold, and place on top of your wraps.
  4. Then you’re ready to serve. I also like to top with some tabasco, tomatoes and avocado.

Ingredients

  • Any kind of wrap (I chose wholewheat wraps) Tortilla
  • Vegan cream cheese spread of cream cheese spread
  • Salad leaves
  • 4 organic eggs
  • 1 ripe avocado

Toppings: avocado, tomatoes, tabasco or hot sauce
