Turkey Bolognaise

  1. Put the oven on to 160c (320F).
  2. Heat some extra virgin olive oil in a large over proof pan on a medium heat. Add in the onion and sauté for about 5 minutes. Then add the carrot and celery and sauté until tender. Add the turkey mince and sauté for one minute. Then add in the tinned tomatoes, balsamic vinegar, tomato puree, mixed herbs and red wine (if you like). Cook until simmering, then add into the oven and cook for 40 mins.
  3. Serve with brown rice pasta and steamed tenderstem broccoli. Top with parmesan cheese and parsley.


  • 500g turkey mince
  • 1 large onion, diced
  • 4 cloves garlic, crushed
  • 4 carrots, chopped
  • 2 sticks celery, chopped
  • 2 x 400g tins of plum tomatoes
  • 1 tbsp balsamic vinegar
  • 2 tbsp tomato puree
  • 2 tbsp mixed herbs
  • Optional ½ cup red wine
  • 60-90g brown rice spaghetti per person
  • Tenderstem broccoli
