Teriyaki Tofu Salad

Serves: 2 Cooks In: 20 minutes

Cut up you tofu and place in baking dish.

Cover with the teriyaki sauce or best miso dressing and mix until the tofu is evenly coated. Then place in over at 180C for 10 minutes.

Cook your rice or quinoa on to cook for the allotted time.

Place the rice or quinoa in a bowl then pop the broccoli, carrots, cooked tofu and dressing from the baking dish on top. You can also choose to steam or sauté your veg if you would prefer them cooked.

Top with spring onion and sesame seeds.

 

Ingredients

  • 220g firm tofu
  • 1/4 cup uncooked brown rice or quinoa per person
  • fist size serving of broccoli per person, broken into florets
  • fist size serving of carrots per person, grated

Topping

  • Spring onions
  • Pumpkin and/or sesame seeds (or any kind of seeds you like!)

TERIYAKI DRESSING (per person)

  • 1 tbsp tamari
  • 1tbsp mirin
  • 1 tbsp rice vinegar
  • ½ tbsp extra virgin olive oil
  • 1 thumb sized piece of ginger, grated
  • 1 lime, juiced
  • pepper
