Super Green Pesto Pasta

Serves: 2 Cooks In: 20 minutes
  1. Place 50g of your cashew nuts in a blending cup and roughly blend.
  2. Toast in a pan until a light brown colour. Place to one side.
  3. Place all the other ingredients, expect for the pasta in the blending cup, and blend until smooth. Adding more water if needed.
  4. Toss with your cooked pasta then place in bowls. Sprinkle with the toasted cashews nuts, salt and pepper and serve with a side salad if you wish. Yum!


  • 150g cashew nuts
  • 50g pine nuts
  • Large handful of basil
  • 1 avocado
  • Lemon, juice
  • 3 tsp nutritional yeast
  • 4 garlic cloves
  • 4 tbs extra virgin olive oil
  • Salt and pepper
  • Brown rice pasta (but you can use any kind of pasta you fancy)
