Spinach Banana Pancakes

Serves: Makes about 8-10 panckaes Cooks In: 20 minutes
  1. Blend bananas, spinach and milk until smooth.
  2. Pour batter into a bowl and stir the flour, baking soda and salt until everything is combined.
  3. Place a pan on a medium heat with some extra virgin olive oil in.
  4. Pour in the batter and cook for about 5 minutes on both sides, until they are golden brown. Make sure not to make them too big, you want them about 10cm wide and 1cm thick.
  5. Add your favourite toppings. I went with peanut butter, coconut yoghurt, chopped banana and maple syrup.

  • 2 large handfuls of spinach
  • 320ml plant-based milk
