
Spinach Banana Pancakes

Serves: Makes about 8-10 panckaes
Cooks In: 20 minutes
- Blend bananas, spinach and milk until smooth.
- Pour batter into a bowl and stir the flour, baking soda and salt until everything is combined.
- Place a pan on a medium heat with some extra virgin olive oil in.
- Pour in the batter and cook for about 5 minutes on both sides, until they are golden brown. Make sure not to make them too big, you want them about 10cm wide and 1cm thick.
- Add your favourite toppings. I went with peanut butter, coconut yoghurt, chopped banana and maple syrup.

- 1-2 bananas
- 2 large handfuls of spinach
- 320ml plant-based milk
- 280g flour (I used
- 1 tsp baking soda
- ½ tsp salt
