Simple Pancakes

Serves: 2 Cooks In:

🥞Stir all the pancake ingredients together to form a smooth, thick batter. If it feels a little thing then leave it to sit for 5-10 minutes.

🥞Warm some coconut oil in a pan over a medium heat. Once warm, spoon the pancake mixture into the pan, using the back of a spoon to spread it out if needed.

🥞Cook on one side for 3-4 minutes until golden, before turning and cooking on the other side for 2-3 minutes.

🥞Repeat until the pancake mixture is finished.

🥞Spread with almond butter, and top with fresh fruit of your choice.


  • 1 cup plain flour (I used gluten free)
  • ¼ cup oats
  • ¾ cup of milk (I used almond milk)
  • 1 tsp chia seeds
  • ½ tsp baking powder
  • Coconut oil

For topping

  • Maple syrup
  • Almond butter
  • Fresh fruit (I used blueberries and a banana)
