Salmon and bok choi poke bowl

Serves: 1 Cooks In: 20 minutes


  1. Cook the quinoa for the time allotted on the packet then allow to cool.
  2. Steam the bok choi for a few minutes so it is cooked but still has its electric green colour.
  3. Cook salmon for 4 minutes in some lightly boiling water. Remove from water then run under cold water and set aside.
  4. Chop up the cucumber, avocado, spring onion, chilli and coriander.
  5. Whisk the ingredients for dressing together in a small glass or bowl.
  6. Place the quinoa on the base of a bowl and top with vegetables and salmon. Then drizzle on dressing before serving.


  • 60 g quinoa
  • 1 bulb of bok choi
  • 1 wild salmon fillet
  • 10 cm Cucumber
  • 1 small avocado
  • Spring onions
  • 1 chilli
  • Small handful of coriander


  • 1/2 tbs mirin
  • 1/2 tbs rice wine vinegar
  • ¼ tsp fish sauce
  • 1/2 tbs olive oil
  • 1/2 tbs tamari
