Rocket, Courgette and Ricotta Salad

Serves: 1 Cooks In: 15 minutes
  1. Place a pan on a medium heat with some extra virgin olive oil in then sauté the courgettes until they have just started to go golden brown.
  2. Then add in garlic powder, chilli flakes, salt and pepper and chickpeas. Cook for another 5 minutes.
  3. While that is cooking make the dressing by combining everything together and whisking.
  4. Grab a medium sized bowl and place into it your rocket, the cooked courgette and chickpeas. Then pop on top the avocado, tomatoes and drizzle over the dressing. Enjoy!


  • 1 courgette, sliced into half moons
  • ½ tsp garlic powder
  • ½ tsp chilli flakes
  • Salt and pepper to taste
  • ½ x 400g can chickpeas
  • 1 large handful of rocket
  • ½ avocado, chopped,
  • 1 handful of tomatoes, chopped
  • 1-2 tbsp ricotta


  • ½ shallot
  • ½ lemon
  • Extra virgin olive oil
