One-pot creamy pasta recipe (dairy free)

Serves: 2 Cooks In: 30 mins
  1. Place onions in a pan on a medium heat to sweat.
  2. While they are sweating make your cashew cream by blending the cashews and almond milk together.
  3. Then add in the mushrooms followed about 5 minutes later by the spinach and garlic.
  4. Add in the dried basil, stock cube, some filtered boiling water and cashew cream.
  5. Add in your pasta and push it down into the liquid as quickly as possible.
  6. Bring everything to the boil, reduce the heat, cover and then stir every minute for about 10 minutes (until pasta is cooked).
  7. Just before serving stir through some lemon juice and chilli flakes and then serve. Enjoy!


  • 1 onion
  • 2 palm served serving of cashews
  • 1 cup almond milk
  • 2 garlic cloves
  • 100g mushrooms
  • 100g spinach
  • 1 tsp dried basil
  • ½ stock cube
  • about a pint of boiling water
  • ½ a lemon
  • ½ tsp chilli flakes
