
No-tuna and sweetcorn pasta salad

Cooks In: 20 minutes
- Cook the pasta for the allotted time. Once the pasta is cooked drain it then rinse under cold water and allow to dry.
- While the pasta is cooking mash up the chickpeas up with a fork in a bowl then add in the rest of the ingredients making sure everything in fully combined.
- Once the pasta is cooked drain it then rinse under cold water and allow to dry.
- Then stir the pasta in with the rest of the salad and top with fresh parsley. Enjoy!
Ingredients
- 2 large fist sizes of dried pasta
- 1 can chickpeas
- 1 red pepper, diced
- ½ red onion, diced
- 2 celery sticks, diced
- 2 carrots, grated
- 2 tbsp vegan mayo
- 1 tbsp tamari
- 2 tsp capers
- ½ lemon, juiced
- 2 tbsp nutritional yeast
- Small handful of parsley
- Salt and pepper
