No-tuna and sweetcorn pasta salad

Serves: 2 Cooks In: 20 minutes
  1. Cook the pasta for the allotted time. Once the pasta is cooked drain it then rinse under cold water and allow to dry.
  2. While the pasta is cooking mash up the chickpeas up with a fork in a bowl then add in the rest of the ingredients making sure everything in fully combined.
  3. Once the pasta is cooked drain it then rinse under cold water and allow to dry.
  4. Then stir the pasta in with the rest of the salad and top with fresh parsley. Enjoy!

Ingredients

  • 2 large fist sizes of dried pasta
  • 1 can chickpeas
  • 1 red pepper, diced
  • ½ red onion, diced
  • 2 celery sticks, diced
  • 2 carrots, grated
  • 2 tbsp vegan mayo
  • 1 tbsp tamari
  • 2 tsp capers
  • ½ lemon, juiced
  • 2 tbsp nutritional yeast
  • Small handful of parsley
  • Salt and pepper
