KIMCHI AVOCADO TOAST

Serves: 1 Cooks In: 10 minutes

1. Place your avocado in a bowl and mash until smooth-ish. Squeeze in some lemon juice and salt and pepper to taste.

2. Place a pan of water on to simmer, until the bubbles are just coming off the bottom no stronger than that. Then crack in a fresh egg and leave to cook for around 3 minutes.

3. Toast a slice of your sourdough bread then pop it on a plate.

4. Place your avocado mixture on top and then the kimchi on top of that and your poached egg on top of that. Sprinkle over fresh parsley if you like and enjoy!

Ingredients

• Sourdough bread
• Juice of lemon
• Salt and pepper to taste
• ½ ripe avocado
• Large dollop of kimchi
• 1 egg (organic and free range)
