Serves: 2 Cooks In: 30 mins
  1. Place a pan on a medium heat, and drizzle in some extra virgin olive oil. Once warm, add in the onion and cook until slightly translucent.
  2. Then add in the garlic, cumin, paprika, and chilli powder and dry fry for about 2-3 minutes until fragrant.
  3. Add in the tomato puree and jackfruit then stir to ensure everything is evenly coated.
  4. Cook for around 20-25 stirring frequently.
  5. Once the jackfruit is soft you can pull it apart with a fork.
  6. Add in the tinned tomatoes and beans then cook for about 10 minutes.
  7. Top with whatever you fancy I went for avocado, sweetcorn, red onion, sour cream, jalapenos and cheese! Oh yeah.


  • ½ red onion
  • 2 cloves garlic
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chilli powder
  • 2 tbsp tomato puree
  • 1 can jackfruit
  • 1 can beans (any kind of beans you like, I used kidney beans)
  • 1 can tinned tomatoes
