JACKET POTATO WITH A KALE, APPLE AND RAISIN SALAD

Serves: 1 Cooks In: 1 hour 15 minutes
  1. Cook the jacket potato at 180C (fan) for 1 hour.
  2. About 10/15 minutes before the potato is ready put the kale, apple, coconut flakes, raisins, pumpkin seeds and flaxseeds in a bowl. Place to one side.
  3. Mix the ingredients for the dressing together and then pour over the kale mixture. Use your hands to massage the dressing into the kale.
  4. Place the jacket potato on top of the salad. Add some butter to the potato if you wish and place a dollop of hummus on the side.

Ingredients

  • Jacket potato, washed and with a cross cut on top
  • 2 handfuls of kale, stalks removed
  • 1 apple, grated
  • Palm sized serving of coconut flakes
  • Palm sized serving of raisins
  • 1 tbs pumpkin seeds
  • 1 tbs flaxseeds
  • Dollop of hummus
  • Organic butter

 Dressing

  • 1 tbs raw apple cider vinegar
  • 1 tbs extra virgin olive oil
  • 1 tsp Dijon mustard
  • Salt and pepper
  • Squeeze of lemon
  • (honey optional)
