
Greens Falafel

Serves: Makes about 10-12 falafel
Cooks In: 30 mins
- Pop the oven on at 190C (370F)
- Add the collard greens, chickpeas, garlic, tahini, lemon juice, cumin, and a healthy pinch each salt and pepper to a food processor and combine.
- Taste and adjust seasonings as needed.
- Once well incorporated, transfer to a mixing bowl and stir in oat flour a little bit at a time until the mixture is thick enough to handle – about 3-4 tbsp
- Form the mixture into evenly sized balls and place on a lined baking tray.
- Pop in the oven for about 20 minutes, turning after 10 minutes, cook until they have started to golden brown on both sides, and are cooked through.
- Serve with a roasted vegetable salad and sweat potato paprika wedges.
Ingredients
- 1 large handful of collard greens, roughly chopped
- Small handful of parsley, roughly chopped
- Small handful of coriander, roughly chopped
- 1x 425-g can chickpeas, rinsed and drained
- 3large cloves garlic, crushed
- 1 tbsptahini
- 1 tbspfresh lemon juice
- 1/2tsp cumin
- ½ tsp baking powder
- Salt and pepper to taste
- 22g (1/4 cup) oat flour, (ground from gluten-free oats)
