
Greek Pasta Salad

- Cook the pasta according to the packet instructions. Then drain, and allow to cool, setting to one side.
- Add the pasta, bell pepper, tomatoes, olives, cucumbers, red onion and feta cheese to a large bowl.
- Combine all of the dressing ingredients in a small bowl and mix until combined.
- Pour the dressing over the salad and toss so that everything is evenly coated. Then you’re ready to serve. Enjoy!
Ingredients
- 2/3 cup any kind of pasta
- 1/2 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup green bell pepper, diced
- 1/2 cup tomatoes, diced
- 1/2 cup Kalamata olives, sliced
- 1/2 cup feta cheese, crumbled
DRESSING
- 1/4 tsp Herbs de Provence
- ½ tsp honey
- 1 tbs raw apple cider vinegar
- 1 tbs extra virgin olive oil
- 1 garlic clove, crushed
- ½ lemon, juiced
- Salt and pepper to taste
