Greek Pasta Salad

  1. Cook the pasta according to the packet instructions. Then drain, and allow to cool, setting to one side.
  2. Add the pasta, bell pepper, tomatoes, olives, cucumbers, red onion and feta cheese to a large bowl.
  3. Combine all of the dressing ingredients in a small bowl and mix until combined.
  4. Pour the dressing over the salad and toss so that everything is evenly coated. Then you’re ready to serve. Enjoy!

 

Ingredients

  • 2/3 cup any kind of pasta
  • 1/2 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup tomatoes, diced
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled

DRESSING

  • 1/4 tsp Herbs de Provence
  • ½ tsp honey
  • 1 tbs raw apple cider vinegar
  • 1 tbs extra virgin olive oil
  • 1 garlic clove, crushed
  • ½ lemon, juiced
  • Salt and pepper to taste
