Eggs, rocket and avocado toast

  1. Boil your eggs to the desired consistency. I do mine soft boiled which is 7 minutes in boiling water with the eggs from the fridge.
  2. While the eggs are cooking mash the avocado up in a bowl, then add in salt and pepper and chilli flakes and make sure everything is well combined.
  3. Toast your bread and then spread your avocado mixture over it.
  4. Next add your rocket on tip then squeeze over the lemon. And top with your boiled egg. Sprinkle over mixed seeds if you fancy. Enjoy!


  • 2 x organic eggs
  • 1 x slice of any kind of bread you fancy (I used rye bread)
  • 1 x avocado
  • Salt and pepper to taste
  • ½ tsp chilli
  • 1 x handful of rocket
  • Squeeze of half a lemon
  • Mixed seeds for sprinkling over the top
