Easy Pancakes (gluten free)

Serves: Makes about 6 panckes Cooks In: 1-2 mins
  1. Put the flour, egg, milk, extra virgin olive oil and a pinch of salt into a bowl or large jug, then whisk into a smooth batter.
  2. Set a medium frying pan or crêpe pan over a medium heat and carefully wipe it with some extra virgin olive oiled kitchen paper.
  3. When hot, cook your pancakes for 1 min on each side until golden. Make sure not to use too much batter to make sure the pancakes are thin and not too thick. Keep them warm in a low oven as you go.
  4. Serve with lemon wedges and caster sugar, or your favourite filling. You may also like to try maple syrup and blueberries.


  • 100g buckwheat flour
  • 1 large egg
  • 200ml milk
  • 1/2 tbsp extra virgin olive oil, plus a little extra for frying
  • lemon wedges to serve (optional)
  • coconut sugar to serve (optional)
