Creamy Broccoli Pasta Salad

Serves: 1 Cooks In: 20 minutes
  1. Rinse the lentils in cold water then place them in pan on a medium/high heat covered with cold water. Bring to the boil and then simmer until sort (around 10 mins). Drain and allow to cool.
  2. Place the broccoli in some boiling water for 3 mins then rinse under the cold tap and allow to dry.
  3. In a small bowl mix together the dressing ingredients.
  4. Grab yourself a bowl and in it pop the spinach, lentils, broccoli, cherry tomatoes, olives, onion and pine nuts. Drizzle over the dressing then mix. Enjoy!


  • 1 handful of spinach
  • 1/3 cup dry lentils
  • 1 fist sized portion of broccoli
  • 1 fist sized serving cherry tomatoes
  • ½ cup dry pasta (I used brown rice pasta)
  • Palm sized serving of red onion, diced
  • Palm sized serving of olives, sliced
  • 1 tbsp pine nuts, toasted
  • 1 ½ tbsp olive oil
  • 1/2 tsp Dijon mustard
  • 1/2 tbsp apple cider vinegar
  • 1/2 tbsp tahini
