Chocolate flapjacks

Serves: Makes about 8 small squares Cooks In: 2 hours 30 mins
  1. Place the oats, desiccated coconut, peanut butter and maple syrup in a large mixing bowl and combine.
  2. Push the mixture down into a lined baking tray and pop in the fridge for 1-2 hours.
  3. Place all of the topping ingredients in a blender and blitz well until smooth. Drizzle over some melted dark chocolate if you fancy. Put the flapjacks back in the fridge to cool for another 1-2 hours.

Ingredients

  • 1 ½ cups of oats
  • ½ cup desiccated coconut
  • ½ maple syrup
  • 1 cup peanut butter

For the topping:

  • 1 ½ cup medjool dates
  • ½ cup raw cacao powder
  • ½ cup coconut oil
  • 2 tbsp almond milk
  • 1 tbsp maple syrup
  • Optional: dark chocolate and hazelnuts
