Chickpea, Caper, Tomato and Basil Salad

Combine the chickpeas, tomatoes, capers and basil in a bowl. Squeeze over the lemon, then add the extra virgin olive oil and season to taste.

  • 400g chickpeas drained and rinsed
  • 300g mixed tomatoes, halved
  • 2 tbsp capers plus juice
  • 1 lemon, juiced
  • 50g basil
  • Extra virgin olive oil
  • Salt and pepper
