Chicken Casserole

Serves: 3/4 Cooks In:
  1. Pop your jacket potatoes in to cook for 1 hour at 200C (400F).
  2. Heat some extra virgin olive oil in a large pan on a medium heat. Add in the onion and sauté for about 5 minutes. Then add the carrot and mushrooms and sauté until tender. Add the chicken and sauté for one minute. Then add in the tinned tomatoes, tomato puree and oregano. Allow to simmer partially covered on the stove for about 30 mins.
  3. Serve with a jacket baked potato and steamed broccoli.


  • 4 organic chicken breasts, cubed
  • 1 large onion
  • 4 carrots, diced
  • 200g mushrooms, quartered
  • 4 cloves of garlic
  • 2 x 400 g tins of plum tomatoes
  • 2 tbsp tomato puree
  • 1 tbsp of dried oregano
  • 2 large handfuls of kale (or any kind of greens)
  • Broccoli
  • Jacket potatoes
