A healthy 8 mushroom broth recipe by nutritionist Jennifer Medhurst

8 MUSHROOM BROTH

  1. Set a large saucepan over a medium heat, drizzle in a little extra virgin olive oil and lightly sauté the leeks, celery, fennel and garlic until they are soft and translucent.
  2. Add in the carrots and the mushrooms and cook for another 5 minutes
  3. Open the organic 8 mushroom extract capsules, drop the mushroom powder into the softened vegetables and stir through
  4. Cover with the broth and lower the heat and simmer gently for 10 minutes.
  5. Serve and enjoy. For an extra boot you can stir through some miso paste or kimchi.

Ingredients

  • 4 garlic cloves
  • 6 small leeks
  • 6 medium sized carrots
  • 1 head of celery
  • 1 bulb of fennel
  • 1 handful of mushrooms (I used a mixture of button mushrooms and chanterelle)
  • 5 shiitake mushrooms
  • 5 capsules of organic 8 mushroom extract from Daylesford
  • 750ml organic chicken or vegetable broth
