4 Veg Peanut Noodles

Serves: 2 Cooks In: 15 minutes

1. Mix all the dressing ingredients together in a bowl and set to one side.
2. Grab a large bowl and pop in all your salad ingredients, then cover with the dressing making sure everything is evenly coated.

Ingredients

  • 2 large handfuls of red cabbage, finely sliced (ideally using a mandolin)
  • 1 x large carrot, ribboned (I use a peeler to do this)
  • 1 red pepper, finely sliced
  • 1 large handful spinach
  • 1 cup edamame
  • 2 x serving buckwheat Noodles
  • 1 handful coriander

Peanut Sauce

  •  ¼ cup peanut butter
  • ½ tsp chilli flakes
  • 1 lime, juiced
  • 2 tbsp tamari or soy sauce
  • 1 tbsp rice vinegar
  • ½ tbsp honey or maple syrup
  • 1 tbsp sesame oil
  • ½ tsp garlic powder
  • ½ tsp ginger powder
  • 1 tbsp filtered water
