Easy Gluten Free Pancakes 🥞 The magical day of Easy Gluten Free Pancakes 🥞

The magical day of pancakes is finally here 👍

INGREDIENTS
•	100g buckwheat flour
•	1 large egg
•	200ml milk
•	1/2 tbsp extra virgin olive oil, plus a little extra for frying
•	lemon wedges to serve (optional)
•	coconut sugar to serve (optional)

METHOD

1.	Put the flour, egg, milk, extra virgin olive oil and a pinch of salt into a bowl or large jug, then whisk into a smooth batter.
2.	Set a medium frying pan or crêpe pan over a medium heat and carefully wipe it with some extra virgin olive oiled kitchen paper.
3.	When hot, cook your pancakes for 1 min on each side until golden. Make sure not to use too much batter to make sure the pancakes are thin and not too thick. Keep them warm in a low oven as you go.
4.	Serve with lemon wedges and caster sugar, or your favourite filling. You may also like to try maple syrup and blueberries.

Mini Raspberry Cheesecakes ♥️ 💖Diving head Mini Raspberry Cheesecakes ♥️

💖Diving head first into the Valentine’s Day madness

INGREDIENTS
•	7 majool dates
•	3/4 cup almonds
•	1 ½ cup cashew nuts, soaked overnight or for at least 4 hours
•	2 bananas, frozen
•	4 tbs maple syrup
•	½ cup raspberries


Method
1.	Before making this you need to slice the bananas and freeze them for at least three hours and you also need to soak the cashew nuts for at least four hours.
2.	Grease/line a muffin tin or preferably use a silicon muffin tray. I used a Zeal heart shaped silicon tray.
3.	Start by making the bases. Place the almonds and dates into a food processor and blend for a few minutes until the nuts are nicely crushed and a sticky mix has formed. Press this into the bases of the muffin tray and place in the freezer for about 20 minutes.
4.	Blend together the cashew nuts, banana and maple syrup until a smooth silky mixture has formed (you may need to add some filtered water to achieved the desired consistency, but remember not too thin!). Pour the mixture onto each of the cheesecake bases until it fills the top.
5.	Make the raspberry swirl by blending together raspberries then dropping about ½ tsp of the mixture onto the top of the cheesecakes. Use a skewer to swirl the raspberry mixture around.
6.	Place the cheesecakes in the freezer overnight or for at least 4 hours to set.
7.	Allow the cheesecakes to sit a room temperature for about 10 minutes before serving with love!

⏱ Takes less then 15 minutes to make, and packed full of nutrition from top to bottom 💪

INGREDIENTS (serves 2)

•	80g king prawns
•	1 x small mango, diced
•	2 x spring onions, chopped
•	1 can chickpeas, drained and rinsed
•	1 x red pepper, diced
•	¼ cucumber, diced 
•	Small bunch of coriander, diced
•	1 lime, juiced
•	Salt and pepper
•	1 tbsp extra virgin olive oil
•	1 tortilla per person, quartered

METHOD

Place everything apart from the tortilla together in a bowl and mix together! Pop the tortilla on the side when you are ready to serve.

As we’re heading towards the end of quite a year, not only is it cold and dark, but we can start putting more pressure on ourselves to do things, and it can often be difficult to find time to rest🥱.
 
Burnout often stems from your job. But anyone who feels overworked and undervalued is at risk of burnout, from the office worker 👩‍💼 who hasn’t had a vacation in years, to the frazzled stay-at-home mum 👩‍👦.
 
But burnout is not caused solely by stressful work or too many responsibilities, your lifestyle and personality traits also play a role. In fact, what you do in your downtime, and your perspective on the world can play just as big of a role in causing overwhelming stress as work or home demands.
 
Whether you recognize the warning signs of impending burnout or you’re already past breaking point🤯, trying to push through the exhaustion and continuing as you have been will only cause further emotional and physical damage❌. Now is the time to pause 🤚and change direction by learning how you can help yourself overcome burnout and feel healthy and positive again.
 
The “Three R” approach to dealing with burnout:

•Reverse. Undo the damage by seeking support and managing stress.
