4 Veg Peanut Noodles 🥡 You won’t be strugg 4 Veg Peanut Noodles 🥡

You won’t be struggling to hit your weekly plant points with this dish. It’s chocka full of gut loving goodness. 

📲 Tag a gut healthy friend and save this to make with them⁠ later

INGREDIENTS

•	2 large handfuls of red cabbage, finely sliced (ideally using a mandolin)
•	1 x large carrot, ribboned (I use a peeler to do this)
•	1 red pepper, finely sliced 
•	1 large handful spinach 
•	1 cup edamame
•	2 x serving buckwheat Noodles 
•	1 handful coriander 

Peanut Sauce
•	¼ cup peanut butter
•	½ tsp chilli flakes
•	1 lime, juiced
•	2 tbsp tamari or soy sauce
•	1 tbsp rice vinegar
•	½ tbsp honey or maple syrup
•	1 tbsp sesame oil
•	½ tsp garlic powder
•	½ tsp ginger powder
•	1 tbsp filtered water

METHOD

1.	Mix all the dressing ingredients together in a bowl and set to one side. 
2.	Grab a large bowl and pop in all your salad ingredients, then cover with the dressing making sure everything is evenly coated.

Chickpea, Caper, Tomato and Basil Salad 🌱⁠

This is simple, light and refreshing...⁠

INGREDIENTS (serves 1)⁠

400g chickpeas drained and rinsed⁠
300g mixed tomatoes, halved⁠
2 tbsp capers plus juice⁠
1 lemon, juiced⁠
50g basil⁠
Extra virgin olive oil⁠
Salt and pepper⁠
⁠
METHOD⁠
⁠
Combine the chickpeas, tomatoes, capers and basil in a bowl. Squeeze over the lemon, then add the extra virgin olive oil and season to taste.⁠

Summer Rolls ☀️ What’s not to love about Summer Rolls ☀️

What’s not to love about these summer rolls! They are packed full of healthy and delicious herbs and veggies and the peanut dipping sauce is out of this world.

INGREDIENTS

•	Rice paper roll wraps
•	Cucumber, sliced into batons
•	Mint, leaves no stem
•	Basil, leaves no stem
•	Carrots, sliced into batons
•	Avocado, sliced
•	Coriander, leaves no stem
•	Butter lettuce
•	Sesame seeds for topping

SAUCE
•	2 tbsp peanut butter
•	1/2 tbsp maple syrup or honey
•	1/2 tbsp rice vinegar
•	2 tbsp tamari or soya sauce
•	1 lime, juiced
•	1 thumb sized piece of garlic, grated

METHOD
1.	Fill a shallow plate (or a pie pan or 9″ round cake tin) with an inch of water. Have another plate standing by ready at the side.
2.	Place one rice paper in the water and rotate it in the water for about 10 seconds. You want it with some tautness to it still not super floppy. If it doubt go for less time rather than more. Carefully lay it flat on the additional plate.
3.	Leaving about 1 inch of open rice paper around the edges, cover the lower third of the paper with your fillings. Sprinkle generously with the fresh herbs.
4.	Fold the lower edge up over the fillings, rolling upward just until the filling is compactly enclosed. Fold over the short sides like you would to make a burrito. Lastly, roll it up. Repeat with the remaining ingredients. And don’t worry if it breaks you can just put this side plate down. 
5.	To make the peanut sauce: In a small bowl, whisk together the ingredients.
6.	Serve the spring rolls with peanut sauce on the side. You can serve them whole, or sliced in half on the diagonal.
